Nouvelle Cuisine’s menu highlights entrees such as Duck, Chateau Briand, Quail, Pork, Veal, Scallops & Much more. Every dish comes perfectly seasoned with it’s own unique elegant sauce, and our signature sides you are sure to enjoy. Every dish is prepared fresh, in house under the supervision of Chef Jan Kinds.
Spectacular appetizers such as Seafood Crepes, traditional Escargot sautéed in Garlic Butter, Shrimp topped with Peppercorn as well as Special Menu Items offered each night from Chef Jan presents our diners with a great culinary experience.
Enjoy a taste of Europe with the fine offerings of Chef Jan Kinds. Chef Jan Kinds learned his craft growing up in the family restaurant in his native Belgian town of Bruges.
Becoming an American restaurateur had been Kind’s dream since childhood. He and Isabelle Roos traveled the United States searching for just the right spot to open a fine dining restaurant and found it in Spring Hill, Florida. The restaurant opened in November 1999 and remained true to its vision. Chef Kinds specializes in delicious Belgian cooking such as Coquille St. Jacques, Dover Sole and Steak topped with traditional Belgian sauces.

No dinner would be complete without a fine dessert or a choice libation. Nouvelle Cuisine offers a nice wine list, domestic beers and a wonderful portfolio of Belgian beers including: Duvel, kwak, Kasteel… each in its own unique glass, and a dessert selection including Creme Brulee, Mascarpone Cheesecake, Chocolate Mousse, Apple Tart, Lemon Tart, Bread Pudding, Coup Advokaat… and for the chocoholics we have Chocolate Walnut Cake with Belgian Callebaut Chocolate!
